Spanish Tortilla
4 servings

4 large peeled and thinly sliced potatos
4 eggs, well beaten
1 large onion thinly sliced
1/2 cup olive oil
salt to taste
pepper to taste

Place the peeled, thinly sliced potatoes in a frying pan about 1
inch high( select size of frying pan to allow this hight) Place
frying pan over a moderate heat and cook until the top liquid egg
mixture begin to harden. You can place the frying pan under a
broiler to cook the top or you can place a plate over the frying
pan , turn the frying pan upside down over the covering plate and
remove partially cooked Tortilla, put the empty frying pan back on
the fire, carefully slide the tortilla back into the frying pan
with the uncooked side toward the bottom of the frying pan. Cook
a few minutes more.

Note: Add green or red peppers and cheese to give it more flavor.
