PAELLA

1 lb shrimp
1 lb mussels, cleaned
1 lb clams, cleaned
1 lb tiny blue crabs, or one large crab
1 large or 3 small squids, cleaned

1 to 2 tablespoons olive oil
2 cloves garlic, crushed
1 medium onion, finely diced
2 tablespoons chicken bouillon

1 chicken, cut into 2 inch pieces
5 handfuls white rice
1 tsp saffron

In a medium kettle, bring to boil the shrimp, mussels, clams, crabs
ans squids. Remove seafood. Reserve broth.

In a Paella pan or large kettle, saute garlic, onion and chicken
bouillon in oil. Add, chicken and cooked seafood and brown.

Add reserved seafood broth and enough additional water to cover
and cook until chicken is half done (about 10 minutes).

Add rice and saffron.

Cook on medium/low heat until chicken and rice are tender. Let
rest for about 15 minutes.



Paella

5 puqos de Arroz
Dos dientes de Ajos
Media Cebolla
Una cuchara de Aceite de Oliva
dos cucharas grandes de Avecren
Azafran
Medio kilo de Gambas
Medio kilo de Mejillones
Medio kilo de Chirlas
Un Cangrejo, si es posible, medio kilo de los pequeqos
Un Calamar si es grande, y si no tres pequeqos
Un pollo entero cortado en trozos

Primero, se cuezen todos los mariscos, el calamar y mejillones se
limpian antes de cocer

En una paellera se pone el aceite, los ajos, la cebolla, y el
avecren, se frien hasta que esten doraditos, Luego se pone el pollo
y los mariscos. Cuando el pollo esta doradito se pone el agua
hasta que todo esti cubierto. Se deja cocer. Cuando el pollo esti
por la mitaz de echo se pone el arroz, es mejor si se remoja el
arroz antes. Cuando el pollo y el arroz esten blandos se pone el
azafran y se apaga. Se deja reposar unos 15 minutos.
