Paella

1 onion, chopped or sliced
2-3 cloves garlic, finely chopped
2 cups rice
4 cups chicken broth (2 1/2 if you are using basmati rice)
1 tsp oregano
1 tsp paprika
pinch saffron
1 or 2 red peppers, sliced
cubed, grilled chicken
slices of sausage
sliced beef
shrimp
scallops
fish

Fry the onions in oil until golden, add the uncooked rice and fry
until shiny. Add the broth, oregano, paprika, garlic and red
peppers. Powder the saffron (I use a mortar) and mix it with a
little bit of broth. Add it to the rice and mix well. Bring to
a boil, and then simmer for about 15 minutes. You can do this
either inside the oven (about 350 F) or on the stove top. I prefer
the latter, as it's easier to check. Add the goodies and cook for
an additional 10 minutes or until the rice is done.
