Garlic Soup 03

Spanish Garlic Soup 2 Tbsp olive oil 4 large. garlic cloves, minced 4 cups beef stock 3 crushed tomatoes 1 Tbsp paprika 1/4 tsp ground cumin 4 slices crusty bread Parmesan cheese (to sprinkle) pinch of saffron salt and pepper to taste In a large frying pan, cook garlic in olive oil until golden brown, and set aside. Cook tomatoes over medium heat for about 2 minutes. Add beef stock, saffron, paprika, salt and pepper to tomatoes. Cook for about 2 minutes, and pour soup into oven-safe bowls. Place a slice of bread on top of each bowl, and sprinkle with cheese and parsley. Bake in oven for 5-7 minutes.
