AIOLI (makes 2 3/4 cups)
3 tbsp minced garlic 4 egg yolks 2 tbsp fresh lemon juice 1/2 tsp salt 2 1/2 c extra virgin olive oil
Smash the garlic cloves, using the blade of a large knife. Peel the garlic and chop very finely. You should have 3 tbsp.
Combine the garlic with the egg yolks, lemon juice, and salt in the bowl of a food processor. With the motor running, slowly add the oil. Process until thick.
